New england lamb bake

Ingredients:
1 tbspCooking oil
2 lbsBoneless lean lamb
1 Onion, Chopped
1/4 cupAll-purpose flour
5 cupChicken broth
2 Carrots, sliced
2 Leeks, cut into 2 inch
Pieces
2 tbspMinced fresh parsley
Divided
1 Bay leaf
1/2 tspDried rosemary
1/4 tspDried thyme
1/2 tspSalt
1/4 tspPepper
3 Potatoes, peeled and sliced
1/4 cupButter or margarine
Procedures:
1In a large dutch oven, heat oil.
2Brown lamb and onions.
3Stir in flour; mix well.
4Gradually, add broth.
5Bring to a boil, stirring to remove browned bits from pan.
6Add carrots, leeks, 1 tablespoon of parsley, bay leaf, rosemary, thyme, salt and pepper.
7Spoon into a greased 3 quart casserole.
8Cover with potatoes and dot with butter.
9Bake at 350 °F for 1 ?2 hours or until the meat is tender and the potatoes are golden brown.
10Garnish with remaining parsley.
11Yield: 6-8 servings
