Ingredients:
1 Onion
2 tbspButter
1 tbspOil
3 lbsChicken pieces
2 tbspMild curry powder
1 1/4 cupChicken broth
1 Garlic clove
2 tbspLemon juice
Salt
Cayenne pepper
2 tbspLight cream
Procedures:

2Heat butter and oil in casserole and cook onion till transparent.
3Add chicken pieces, a few at a time, and brown on all sides.
4Sprinke chicken with curry powder and pour in broth.
5Add peeled and crushed garlic, lemon juice, and a pinch each salt and cayenne pepper.
6Cover and simmer for 35 mins.
7Over a low heat.
8Add cream and cook gently for 10 mins.
9Do not boil.
10Serve with plain boiled rice and side dished of apple slices, cucumber sprinkled with salt and grated fresh coconut.
