Ingredients:
| | Ribs or 1 chicken cut up | | 3/4
| cup | Onions, chopped | | 4
| large | Garlic, minced | | | Peppers see directions | | 2
| tbsp | Allspice | | 1
| tbsp | Vinegar | | 2
| tbsp | Salad oil | | 1
| tsp | Nutmeg | | 1
| tsp | Salt | | 12
| | Bay leaf soaked in hot water |

Procedures:
| 1 | Peppers: you can control the heat with the type of peppers you use. | | 2 | Between the marinade and the cooking, a lot of the heat will be lost, so dont be afraid to throw a couple of whatever hot peppers you have on hand. | | 3 | I use 2 large cayennes, 2-4 chilies, and a token jalapeno. | | 4 | The preperation: combine everything except the bay leafs and the meat in a large zip lock ba add meat and thouroughly mix. | | 5 | Let marinate in the fridge at least 2 hours preferably until the next day. | | 6 | Fire up the bbq. | | 7 | Remove meat fromthe bag wiuth as much as the marinade as possible still clinging to it. | | 8 | Place half of the bay leafs on the meat. | | 9 | Dum the remaining marinade or use it as insect repellant. | | 10 | Cook very slowly over medium heat turning often. | | 11 | If your grill has a vented hood close it . | | 12 | Do no let meat burn. | | 13 | Cover and cook about ?hour. | | 14 | After ?hour remove the bay leaf, turn meat, place the remaining bay leav on the meat and cook till done (about ??hours more depending on the heat). | | 15 | Eat. | | 16 | Break out the beer. | | 17 | You"ll need it. |
