Ingredients:
Ribs or 1 chicken cut up
3/4 cupOnions, chopped
4 largeGarlic, minced
Peppers see directions
2 tbspAllspice
1 tbspVinegar
2 tbspSalad oil
1 tspNutmeg
1 tspSalt
12 Bay leaf soaked in hot water
Procedures:
1Peppers: you can control the heat with the type of peppers you use.
2Between the marinade and the cooking, a lot of the heat will be lost, so dont be afraid to throw a couple of whatever hot peppers you have on hand.
3I use 2 large cayennes, 2-4 chilies, and a token jalapeno.
4The preperation: combine everything except the bay leafs and the meat in a large zip lock ba add meat and thouroughly mix.
5Let marinate in the fridge at least 2 hours preferably until the next day.
6Fire up the bbq.
7Remove meat fromthe bag wiuth as much as the marinade as possible still clinging to it.
8Place half of the bay leafs on the meat.
9Dum the remaining marinade or use it as insect repellant.
10Cook very slowly over medium heat turning often.
11If your grill has a vented hood close it .
12Do no let meat burn.
13Cover and cook about ?hour.
14After ?hour remove the bay leaf, turn meat, place the remaining bay leav on the meat and cook till done (about ??hours more depending on the heat).
15Eat.
16Break out the beer.
