Lemon-breaded fried chicken

Ingredients:
1/4 cupFresh lemon juice
1 lbsFrying chicken, quartered
-or 3-lbs. breasts
2 tspSalt
1/2 cupAll-purpose flour
1 Egg, lightly beaten
1 1/2 cupDry fine bread crumbs
Vegetable oil
Lemon wedges
Procedures:
1Sprinkle lemon juice over chicken and turn until thoroughly moistened.
2Let stand 1 ?hours, turning pieces occasionally.
3Pat chicken dry with paper towels.
4Sprinkle with salt; dip in flour and shake off excess.
5Dip in egg; roll in bread crumbs to coat thoroughly.
6In a heavy skillet, heat oil (should be ?inch deep at all times during frying).
7Add one-half of chicken pieces and when deep golden brown, turn and complete frying.
8Test for doneness.
9Remove to platter and keep warm.
10Fry remaining chicken.
11Serve garnished with lemon wedges.
