Ingredients:

| | Roasting chicken | | 3
| quart | Water | | | Salt to taste | | 3
| | Peppercorns | | 1/4
| | Bay leaf | | 2
| | Sprigs parsley | | 1
| | Stalk celery, with leaves | | 4
| med | Carrots, cubed | | 1
| med | Onion, peeled | | 2
| | Cloves | | 1
| cup | Brown rice, raw |

Procedures:
| 1 | Rinse chicken in cold water. | | 2 | Place in large pot with salt, peppercorns, water, bay leaf and parsley. | | 3 | Bring to a boil, and skim to remove any foam. | | 4 | Reduce heat; add carrots, cecele, onion and cloves presses into onion. | | 5 | Cover and simmer for 1 hour or until chicken is tender. | | 6 | Skim off any fat. | | 7 | Lift out chicken. | | 8 | Remove celery, onion, bayleaf. | | 9 | Add rice to broth and simmer til tender. | | 10 | Remove chicken from bone, cut into bite size pieces and return to broth. | | 11 | Heat 20 minutes. |
