Oprah's un-fried chicken

Ingredients:
Light Vegetable oil
Cooking spray
6 eachChicken drumsticks
Skin removed
3 eachWhole chicken breasts
Halved and skin removed
3 1/2 cupIce water
1 cupPlain nonfat yogurt
BREADING:
1 cupItalian breadcrumbs
1 cupAll-purpose flour
1 tbspOld Bay seasoning
1/2 tspGarlic powder
1/2 tspCreole seasoning
1/8 tspFreshly ground black pepper
1 dashCayenne pepper
1/2 tspDried thyme
1/2 tspDried basil
1/2 tspDried oregano
Procedures:
1Preheat the oven to 400 degrees.
2Coat a baking sheet with three sprays of the vegetable oil.
3Put the chicken in a large bowl with the ice water.
4Put the yogurt in a medium bowl.
5Set both bowls aside.
6Toss all the breading ingredients into a large, tightly-sealed plastic bag.
7Seal and shake well to mix.
8Remove two pieces of chicken from the ice water.
9Roll each piece in the yogurt.
10Put the chicken into the plastic bag, reseal, and shake to coat thoroughly.
11Transfer the breaded chicken to the prepared baking sheet.
12Repeat the process until all 12 pieces are breaded.
13Spray the chicken lightly with the vegetable oil.
14Place the baking sheet on the bottom shelf of the oven and bake for 1 hour, turning pieces every 20 minutes to allow for even browning.
15Serve hot or at room temperature.
