Ingredients:
| 1
| lbs | Chicken liver | | 1/2
| lbs | Butter | | 1
| med | Onion | | 1/4
| tsp | Nutmeg | | 1/4
| tsp | Cloves, ground | | | Salt & pepper, to taste | | | Wine, white, dry | | 1
| dash | Tabasco sauce |

Procedures:
| 1 | Put liver in a baking dish and add butter. | | 2 | Bake at 350°F. | | 3 | Until done. | | 4 | Cool liver. | | 5 | Grind liver and onion. | | 6 | Mix liver, butter and onion, nutmeg and cloves. | | 7 | You may need to add a bit more melted butter to make it spreadable. | | 8 | Add salt and pepper. | | 9 | Add wine to the liver, to moisten. | | 10 | Add a dash of tabasco. | | 11 | Place in a terrine and allow to chill overnight. | | 12 | Garnish and serve. | | 13 | the texas cookbook mary faulk koock |
