Ingredients:
-OLIVIA EVANS
3 lbsBroiler-fryer
Salt and pepper
1 (2") piece of celery
1 Carrot
1/2 Onion
1 cupChicken broth
1 Bay leaf
Procedures:
1Wash chicken and giblets and pat dry.
2Place in crock pot and season with salt and pepper.
3Tuck celery, carrot and onion around chicken.
4Pour in broth and add bay leaf.
5Cover and cook on low for 7-8 hours or until chicken is tender.
6Lift chicken from pot and let stand until cool enough to handle.
7Strain stock into refrigerator container.
8Chill.
9Lift fat off stock.
10Remove chicken meat from bones in as large pieces as possible.
11Place in a container.
12Cover and chill.
13Use in salads or casserole dishes.
14Yields about 2-?to 3 cups chicken meat and 1 cup jellied stock.
