| oz | Drained Artichoke Hearts | | 1/2
| tsp | Salt | | 4
| | Chicken Breasts * | | | Fresh Ground Pepper | | 8
| | Slices Lean Bacon | | 4
| tbsp | Sweet Vermouth | | 1
| cup | Italian Plum Tomatoes, Chop | | 1
| cup | Grated Cheddar Cheese |

Procedures:
| 1 | * chicken breasts should be skinned and boned. | | 2 | ~--------------------------------------------------------------------- ~-- preheat oven to 350°F. | | 3 | Arrange the artichoke hearts on the bottom of a baking dish and sprinkle with salt. | | 4 | Place the chicken breasts on top of the artichoke hearts. | | 5 | Season lightly with pepper. | | 6 | Lay bacon slices close together over the chicken and spoon vermouth over all. | | 7 | Bake for 45 minutes, draining excess fat. | | 8 | Combine the tomatoes with the cheese and spoon over the chicken. | | 9 | Cook for 15 minutes more. | | 10 | Add more vermouth if desired. | | 11 | For golden brown color, broil for 1 minute. | | 12 | Serve with cooked rice |
