Ingredients:
| 3
| lbs | Chicken, cut up | | 1/2
| lbs | Butter | | 1/2
| tsp | Salt | | 1/4
| tsp | Pepper | | 2
| cup | Fine bread crumbs | | 2
| tbsp | Cornstarch |

Procedures:
| 1 | Rinse and pat-dry chicken pieces. | | 2 | Melt the butter in a saucepan. | | 3 | Mix the salt, pepper, bread crumbs and cornstarch thoroughly. | | 4 | Dip each piece of chicken into the melted butter and then into the bread crumb mixture. | | 5 | Place the chicken pieces skin-side down, in a shallow baking pan. | | 6 | Bake in a 350 degree oven for 45 minutes, then turn each piece of chicken over, skin-side up, and continue cooking for another 25 minutes, or until each piece is richly browned and can be easily pierced with a fork. | | 7 | Serve at once. |
