Ingredients:
2/3 cupPlum sauce, or duck sauce
2 tspHoisin sauce
2 tbspDry sherry
1 tbspSoy sauce, low sodium
1 tspOriental sesame oil
2 tbspPeanut oil, asian or
-domestic cold-pressed
1 tbspGinger root, grated
2 Cloves Garlic, minced
1/4 cupFresh cilantro chopped
1/2 tspDried red chili pepper
-crushed
Procedures:
1Combine the plum sauce, hoisin, sherry and soy sauce in a nonreactive mixing bowl.
2Whisk in the oils a little at a time.
3Add the ginger, garlic, cilantro and chili pepper.
4Makes 2 cups.
5Recommended cuts: chicken breasts (4 to 6 hours) chicken wings (6 to 8 hours) spare ribs (8 hours to overnight) author"s note: this is becoming a stock item in my refrigerator, especially during the warm weather months.
6The spicy, fragrant marinade will cling to spare ribs and chicken wings, creating a brilliant red glaze.
