Orange ginger chicken

Ingredients:
1 largeLemon
3 largeOranges
2 tbspOlive oil
2 Whole chicken breasts
-boned, skinned and pounded
-flat
1 Inch piece ginger, minced
3 Garlic cloves, minced
1 largeOnion, sliced
1 largeRed pepper, julienned
1 cupTrimmed snow peas
3 tbspSoy sauce
1 1/2 tbspHoisin sauce
1 tbspCornstarch, mixed with 2
-tb water
Procedures:
1Grate 2 oranges and lemon; set peel aside.
2Squeeze juice from 2 oranges and lemon.
3Set aside.
4Section third orange; set sections aside.
5Heat olive oil in a large skillet; add chicken pieces, ginger and garlic.
6Saute until chicken pieces are brown on both sides.
7Reduce heat; add onion, red pepper strips and snow peas.
8Heat gently while combining juices, soy sauce, hoisin sauce and cornstarch.
9Mix well and add to skillet.
10Stir over medium heat until sauce thickens and coats chicken and vegetables.
11Add orange segments.
12Serve at once on hot plates.
