Ingredients:
2 lbsJerusalem artichokes
6 cupChicken broth
1 cupThinly sliced green onions
Salt/pepper to taste
2 tbspMinced fresh dill
Procedures:
1Scrub jerusalem artichokes and cook in simmering water 30-40 minutes, until tender.
2Drain and discard cooking liquid.
3Peel and mash artichokes and place in a large saucepan.
4Stir in chicken broth and green onions.
5Simmer for about 15 minutes; season to taste with salt/pepper and serve sprinkled with dill.
