Green cabbage and ham soup

Ingredients:
1/2 Green cabbage, about 6 cups
3 tbspUnsalted butter
3 medRed sweet onions, pe
-eled/diced/1 ?c
3 medIdaho baking potatoes
-peeled/diced/2 ?c
5 cupChicken stock, (5 to 6)
2 cupWater, (as needed)
1 1/4 cupSkim milk
Salt & fresh ground white pe
-pper -- to taste
Cayenne, to taste
Garnish
3/4 cupShredded ham
1/2 cupChopped parsley
Procedures:
1Melt butter in a heavy soup pot.
2Add onion and potato.
3Simmer until the onions and potatoes have absorbed the butter.
4Add 4 cups of chicken stock and the water.
5Cook until the onion and potatoes are tender.
6Add the cabbage and continue to cook= until the cabbage is crisp-tender but still and has not lost its green color.
7Add more stock if the soup has cooked down too much.
8Puree the soup in a blender , but not a processor as the processor makes cooked potatoes sticky.
9Add milk and about ?c stock or water to the puree.
10This is a rather thick= soup but if you wish it to be thinner, use stock or water to thin it down.
11Season with salt, pepper and cayenne.
12When ready to serve, add the parsley and= ladle into warm bowls.
13Sprinkle a little slivered ham on top
