Ingredients:

| lbs | Yellow Onions, chopped | | 3
| tbsp | Butter | | 1 1/2
| tbsp | Flour | | 3
| | Eggs | | 2/3
| cup | Half-And-Half | | 1
| tsp | Salt | | 1
| pinch | Nutmeg | | 4
| slice | Bacon, cooked crisp and | | | -crumbled | | 3/4
| cup | Swiss Cheese, grated | | 1
| | 9" Partially Cooked Pastry | | | -Shell |

Procedures:
| 1 | Saute the onions in a heavy skillet with the butter over very low heat, stirring occasionally until they are extremely tender and a golden yellow. | | 2 | This will take about an hour. | | 3 | Sprinkle with the flour, mix well, and continue to cook slowly for another 3 minutes or so. | | 4 | Remove from heat and allow to cool. | | 5 | Whisk together the eggs and cream in a bowl. | | 6 | Blend in the salt, pepper and nutmeg. | | 7 | Arrange the onions in the bottom of the pastry shell, then sprinkle on the bacon pieces. | | 8 | Pour the egg custard over the onions and sprinkle on the cheese. | | 9 | Bake in the upper third of a 375f oven for 25-30 minutes, or until the quiche has puffed and browned |
