Onion, cheese and bacon quiche

Ingredients:
2 lbsYellow Onions, chopped
3 tbspButter
1 1/2 tbspFlour
3 Eggs
2/3 cupHalf-And-Half
1 tspSalt
1 pinchNutmeg
4 sliceBacon, cooked crisp and
-crumbled
3/4 cupSwiss Cheese, grated
1 9" Partially Cooked Pastry
-Shell
Procedures:
1Saute the onions in a heavy skillet with the butter over very low heat, stirring occasionally until they are extremely tender and a golden yellow.
2This will take about an hour.
3Sprinkle with the flour, mix well, and continue to cook slowly for another 3 minutes or so.
4Remove from heat and allow to cool.
5Whisk together the eggs and cream in a bowl.
6Blend in the salt, pepper and nutmeg.
7Arrange the onions in the bottom of the pastry shell, then sprinkle on the bacon pieces.
8Pour the egg custard over the onions and sprinkle on the cheese.
9Bake in the upper third of a 375f oven for 25-30 minutes, or until the quiche has puffed and browned
