Lentil and spinach soup

Ingredients:
1 cupBrown lentils
2 eachBay leaves
1 eachCelery stick, finely chopped
2 tspGinger, grated
8 cupVegetable stock
1 tbspOlive oil
1 largeRed onion, chopped
2 eachCloves garlic, crushed
2 medTomatoes, peeled & chopped
1 bunchSpinach, chopped
2 tspCider vinegar
1 tspCilantro, chopped
Procedures:
1Combine lentils, bay leaves, celery, ginger and stock in large pan, simmer, uncovered, about 30 mins or until lentils are just soft.
2Heat oil in the pan, add onion and garlic, cook, stirring, until onion is soft.
3Add tomatoes, cook, stirring, until tomatoes are pulpy.
4Add the spinach, stir over heat until spinach is wilted.
5Add spinach mixture to lentil mixture, stir in vinegar and coriander; stir until heated through.
6Discard bay leaves before serving.
