Ingredients:
1/2 cupOlive Oil
2 largeOnions, Chopped
6 Carrots, Chopped
1/2 tspThyme, Dried
1/2 tspMarjoram, Dried
3 cupChicken Stock
1 cupLentils, Washed
1/4 cupParsley, Chopped
6 ozTomato Paste
28 ozPlum Tomatoes
1 cupBrown Rice, Uncooked
1 tspVinegar
1 tbspParmesan, Grated
Procedures:
1Saute onions and carrots in oil in large pot 3-5 minutes.
2Add thyme and marjoram and saut?another minute.
3Add the remaining ingredients and cook in covered pot 45 minutes.
4To serve, place ?tsp vinegar in bowl, add lentil mixture and top with grated cheese (parmesan or other favorite).
