Lentil-vegetable stew

Ingredients:
1/4 cupWine Sherry
1 cupOnion chopped
1 cupCarrot shredded
1/2 cupPotato sweet diced
1 medPepper green
2 tbspGarlic clove minced
2 cupLentils
6 cupVegetable Broth (home made)
1/4 tspCumin seed, ground
1 tspCurry powder
1/4 tspCinnamon
Procedures:
1In a skillet over medium high heat, bring sherry to a simmer.
2Add onions and saute 2 minutes.
3Add carrots, sweet potato, bell pepper, and garlic; saute 1 minute until sherry evaporates.
4Spoon into slow cooker.
5Add remaining ingredients.
6Cover and cook on low for 8 to 10 hours until lentils are cooked.
7Add salt and pepper to taste.
8Serve over rice (recommend basmati or jasmine)
