Linda mccartney's avocado & green chili soup

Ingredients:
2 Ripe avocados
3 cupSoy milk
4 ozCanned green chilies
1 medOnion, chopped
Salt and pepper, to taste
2 tbspLemon juice
2 tbspDry sherry
FOR GARNISH
Chopped chilies -OR-
Fresh parsley
Procedures:
1Cut the avocados in half and remove the pits.
2Scoop out the avocado pulp and puree in a blender.
3Add the remaining ingredients except garnish to the blender and puree until evenly smooth.
4Pour the mixture into a serving bowl, garnish, nad serve immediately.
