Ingredients:

| tbsp | Oil | | 1
| large | Onion, chopped | | 2
| each | Leeks, sliced | | 3
| each | Stalks celery, chopped | | 1
| each | Garliccloves, crushed | | 4
| med | Carrots, sliced | | 1
| cup | Cabbage, shredded | | 2
| med | Potatoes, chopped | | 1
| tsp | Fresh thyme | | 1
| tsp | Fresh rosemary | | 2
| tbsp | Fresh parsley | | 2 1/2
| cup | Vegetable stock | | 16
| oz | Tomatoes | | | Salt & Pepper to taste |

Procedures:
| 1 | Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic 5 mins. | | 2 | Add the carrots, cabbage and potatoes and stir well. | | 3 | Add the herbe. | | 4 | Cover with vegetable stock and simmer, with the lid on, for about 1 hour. | | 5 | Stir occasionally, and add more liquid if necessary. | | 6 | If you"re using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily. | | 7 | Then stir the skinned tomatoes into the soup. | | 8 | If using canned, add to the soup and stir well. | | 9 | Season with salt and pepper and serve. |
