Linda's vegetable soup

Ingredients:
2 tbspOil
1 largeOnion, chopped
2 eachLeeks, sliced
3 eachStalks celery, chopped
1 eachGarliccloves, crushed
4 medCarrots, sliced
1 cupCabbage, shredded
2 medPotatoes, chopped
1 tspFresh thyme
1 tspFresh rosemary
2 tbspFresh parsley
2 1/2 cupVegetable stock
16 ozTomatoes
Salt & Pepper to taste
Procedures:
1Heat the oil in a large saucepan and saute the onion, leeks, celery, and garlic 5 mins.
2Add the carrots, cabbage and potatoes and stir well.
3Add the herbe.
4Cover with vegetable stock and simmer, with the lid on, for about 1 hour.
5Stir occasionally, and add more liquid if necessary.
6If you"re using fresh tomatoes, sit them on top of the veggies for a minute or two, until their skins peel away easily.
7Then stir the skinned tomatoes into the soup.
8If using canned, add to the soup and stir well.
9Season with salt and pepper and serve.
