Ingredients:
1 medOnion -- chopped
3 Cloves Garlic -- minced
1/4 cupDry Sherry
4 cupVegetable Stock
28 ozCan Roma Tomatoes-undrained
-chopped
15 ozCan Kidney Beans-drained
-and rinsed
1 1/2 tbspTomato Paste -- or more to
Taste
2 medZucchini -- cut in small
Pieces
1/2 lbsGreen Beans -- (fresh)
Sliced
1 tspSalt
1 Splash Tabasco Sauce-or
-to taste
1/2 tspFresh Ground Black Pepper
2 tspDried Basil
2 tspDried Oregano
1/2 cupMacaroni -- small shell
Procedures:
1In a large pot, saut the onion and garlic in the sherry until the onion is translucent, adding more sherry if needed.
2Add everything else, and bring it to a boil over medium-high heat.
3Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
