Mama's potato soup

Ingredients:

2 tbspOil
4 Cloves garlic, minced
1 cupOnions, finely chopped
3 medTomatoes, peeled and chopped
1/2 cupGreen chilies, chopped
1 tbspFlour
2 quartChicken broth, hot
2 1/2 cupRaw potatoes, peeled and
-cut into small cubes
2 tspSalt or to taste
1 tspBlack pepper
2 medSized carrots, peeled and
-thinly sliced
1 medSized zucchini, thinly
-sliced
2 cupMonterey Jack cheese, cut
-into small cubes
Procedures:
1Heat oil in 3-quart saucepan and add garlic, onions, tomatoes and green chilies; saute for 3 minutes.
2Stir in flour and cook for 2 more minutes.
3Continue stirring as you pour in the hot broth.
4Add potatoes, salt and pepper.
5Cover pan and simmer over low heat for 20 minutes.
6Add carrots and zucchini and cook for 15 minutes longer or until potatoes are tender.
7Just before serving add the cubed cheese.
8Makes 4 to 6 servings.
