1/2 cupPastina (my note: any small
-pasta)
1 tspParsley, chpd
1 Carrot, thin sliced
1/2 lbsSpinach, julienned
MEATBALLS
1/2 lbsGround beef^
1 Egg
2 tspFlavored breadcrumbs
1 tspParmesan
2 tspParsley, chpd
1 smallOnion, minced
2 Eggs, additional
Parmesan
Procedures:
1So many different textures and colors.
2Worth the little extra effort.
3Soup: in soup pot, combine ingreds; bring to a low boil.
4Meatballs: mix.
5In sm bowl, beat 2 eggs.
6With wooden spoon, stir soup as you slowly drop in eggs, stirring constantly.
7Remove from heat; cover; let stand 2 mins.
