Mediterranean white bean soup

Ingredients:
2 cupWhite beans note)
7 cupWater
1 Onion, chopped
6 To 7 cloves minced garlic
2 Potatoes, peeled and
-chopped
8 ozCan water-packed artichokes
-drained
4 ozCan sliced
-black olives, drained
8 ozCan tomato sauce
1 tspItalian herb mix
Procedures:
1Place the beans in a large pot with the water.
2Cover and cook over medium heat for 1 hour.
3Add the onion and garlic and continue to cook until the beans are tender, 1 to 1 ?hours.
4Add the potatoes and cook another 20 min. add the remaining ingredients and cook for about 10 more min. note: if you soak the beans overnight, the total cooking time may be reduced by 30 min.
