Mellow cheese soup

Ingredients:
3 medLeeks
1/4 cupButter/margarine
5 cupChicken broth
1 medAll purpose potato pared
And sliced thin
2 Egg yolks
1 cupShredded Jarlsberg cheese
Divided
Salt and white pepper to
Taste
Procedures:
1Rinse leeks under running cold water to remove sand.
2Cut leeks 1 inch above white base.
3Reserve 1 green leaf for garnish; discard remaining leek greens.
4Coarsely chop white part of leeks into pieces.
5In medium saucepan, over medium heat, saute leeks in butter until soft, about 3 minutes.
6Add broth and potato; cover and cook until potato is fork tender, about 20 minutes.
7In blender container or food processor, in batches, process soup until pureed.
8Return soup to saucepan.
9In small dish, beat egg yolks.
10Stir ?cup soup into yolks.
11Slowly stir yolks back into soup.
12Reserve 2 tb cheese for garnish.
13Gradually stir remaining cheese into soup until melted.
14Season with salt and pepper.
15Pour into serving dishes.
16Garnish each with thin strips of leek green and reserved cheese. -----
