Ingredients:

| | Beef tenderloin steaks, cut | | | - 1 inch thick | | 2
| tsp | Coarse grind black pepper | | 1/2
| cup | Orange marmalade | | 4
| tsp | Cider vinegar | | 1/2
| tsp | Ground ginger |

Procedures:
| 1 | Press pepper evenly into both sides of beef steaks. | | 2 | Place on rack in broiler pan so surface of meat is 2 to 3 inches from the heat. | | 3 | Combine marmalade, vinegar and ginger. | | 4 | Brush top of steaks with half of marmalade mixture. | | 5 | Broil steaks 10 to 15 minutes for rare (140°F). | | 6 | To medium (160-°F)., turning once and brushing with remaining marmalade mixture. | | 7 | Four servings. | | 8 | Serving suggestion. | | 9 | Steamed new potatoes and microwaved asparagus and baby carrots. |
