Ingredients:
1 lbsDried Great Northern Beans
6 cupWater
1 1/2 lbsHam, cubed
2 tspSalt
1 tspDried whole thyme
1/2 tspDried parsley flakes
4 Peppercorns
3 Cloves garlic, minced
1 Bay leaf
2 cupWater
4 medPotatoes, peel and quarter
3 Carrots, scraped & cut into
-?inch slices
1 medOnion, finely chopped
Procedures:
1Sort & wash beans; place in a dutch oven.
2Cover with water 2 inches above beans; let soak overnight.
3Drain.
4Combine beans, 6 cups water, and next 7 ingredients in a large dutch oven; bring to a boil.
5Reduce heat, cover, and simmer for 1 ?hours.
6Add 2 cups water and vegetables to soup.
7Cover and simmer for about 30 minutes or until vegetables are tender.
8Yield: about 1 gallon
