| | Bacon strips, cooked | | | Crisp and crumbled | | 1 1/2
| tbsp | Butter | | 6
| | Red ripe jersey tomatoes | | | Peeled, cored and chopped | | 2
| tbsp | Tomato paste | | 3
| | Lemon rind strips | | 4
| cup | Chicken stock | | 1
| tbsp | Sugar | | 1/2
| tbsp | Thyme (dried) | | 1
| tbsp | Basil (dried) | | | Salt and pepper to taste | | | Croutons for garnish | | | Fresh basil sprigs | | | For garnish |

Procedures:
| 1 | Saute onions in butter about 5 minutes until tender and golden. | | 2 | Add tomatoes, tomato paste, lemon rind, chicken stock, bacon and herbs. | | 3 | Bring to boil, reduce to simmer until tomatoes are tender, about 15 minutes. | | 4 | Remove lemon rind. | | 5 | Cool soup, then puree in blender. | | 6 | Strain puree. | | 7 | Reheat before serving. | | 8 | Garnish with croutons and basil sprigs. |
