Ingredients:
3/4 lbsFlank steak, sliced
MARINADE
2 tspSoy sauce, dark
2 tspRice wine
1 tspGinger, chopped fine
1 tspCornstarch
1 tspSesame oil
1/3 cupPeanut oil
2 Red chilies, dried halved
5 pinchOrange peel, dried soaked
SEASONING
1/2 tspSzechuan peppercorns, roaste
2 tspSoy sauce, dark
1/4 tspSalt
1 tspSugar
1/2 tspSesame oil
Procedures:
1Combine beef with marinade; let stand 20 min. heat oil in a wok or large skillet until very hot.
2Remove bbef from marinade and add to oil; stir-fry until brown (abt.
32 min).
4Remove and drain.
5Remove all but 1 tbs oil, reheat il and add chili peppers; stir-fry 10 sec.
6Add beef, orange peel and seasonings.
7Stir-fry 4 min, mixing well.
8Serve at once
