Nippy apple cheddar soup

Ingredients:
2 tbspButter, unsalted
4 Apples, peeled and chopped
2 Carrots, chopped
1 Onion, chopped
2 Cloves garlic, minced
1 tspGinger root, minced
1 tspDry mustard
1 tspCurry powder
2 cupChicken broth
2 cupApple cider
Salt and cayenne pepper
-to taste
1 cupCheddar cheese, grated (opt)
Procedures:
1In a large saucepan, melt butter over medium heat.
2Add apples, carrots, onion, garlic, ginger, curry powder and mustard; cook, stirring occasionally for 5 to 7 minutes, or until onion begins to soften.
3Add broth and apple cider; bring to a boil.
4Reduce heat and simmer.
5Partially covered, for 15 to 20 minutes, or until vegetables are very tender.
6In a food processor or blender, puree till smooth.
7Season with salt and cayenne pepper to taste.
8Ladle into four bowls.
9Sprinke each serving with ?cup cheddar cheese.
