Nordic potato soup with ham

Ingredients:
3 medThin-skinned potatoe
-s(1.5lb) -- peeled & diced
1 largeOnion, finely chopped
1 Smoked ham hock (1lb)
1 tbspDry dill weed
2 tspGrated lemon peel
1/4 tspWhite pepper
2 1/2 cupChicken broth
1 tbspCornstarch
1/2 cupWhipping cream
Dill sprigs - optional
Procedures:
1In a 3 quart or larger electric slow cooker, combine potatoes, onion, ham hock, dill weed, lemon peel, white pepper and broth.
2Cover and cook at low temperature until ham hock and potatoes are very tender when pierced (7-8 hrs).
3lift out ham hock and let stand until cool enough to handle.
4Meanwhile, remove about 1 cup of the potatoes with a little of the broth; whirl in a blender or food processor ntil pureed.
5Return puree to cooker.
6in a small bowl, mix cornstarch and cream; blend into potato mixture.
7Increase cooker heat setting to high.
8Remove and discard fat and bone from ham; tear meat into bite size pieces and stir into soup.
9Cover and cook, stirring 2 or 3 times, for 20 more minutes.
10Garnish with dill sprigs.
11Makes 4-6 servings.
