Old-fashioned fish chowder

Ingredients:
2 tbspVegetable oil
2 medOnions, minced
2 largeBaking potatoes, cubed
1/2 tspDried thyme
1/2 cupTurkey, fish or vegetable
. stock
1 lbsCod or haddock fillet
4 cupMilk
1/2 tspSalt
Pepper, fresh ground
Paprika for garnish
Procedures:
1Heat the vegetable oil in a large, heavy saucepan over low heat.
2Add the onions and saute for 10 minutes, or until golden but not brown.
3Add the baking potatoes (cut into ?inch cubes), the dried thyme and the turkey stock.
4Cover and simmer for 10 minutes, or until the potatoes are tender.
5Add the cod or haddock fillet, cover and simmer gently for 10 minutes.
6Add the milk, salt and black pepper to taste.
7Cover and simmer 5 minutes, or until the mixture is thoroughly hot.
8Gently flake the fish with a fork into bite-sized pieces, then ladle the chowder into soup bowls.
9Sprinkle with paprika and serve immediately.
10Makes 6 servings.
