Ingredients:

| | Garlic cloves, minced | | 1
| tbsp | Ginger, fresh, minced | | 2
| tbsp | Sesame oil | | 1/2
| cup | Soy sauce | | 2
| tsp | Red peppers, dried, crushed | | | Tb Honey | | 1/2
| tsp | White pepper | | 4
| tbsp | Dry Sherry |

Procedures:
| 1 | Cut meat diagonally crosswise into ? thick, 2 " wide strips. | | 2 | Trim away any fat or gristle. | | 3 | Transfer to a non-metallic pan. | | 4 | Add the other ingredients and marinade 24 hours. | | 5 | Arrange meat on racks and let dry at cool room temperature overnight (do not refrigerate). | | 6 | Preheat oven to 22Line two large baking sheets with foil and set wire racks on top. | | 7 | Arrange the meat on racks in single layer. | | 8 | Bake 15 minutes. | | 9 | Reduce heat to 175°F and continue drying meat another 4 hrs or more. | | 10 | Leave meat on racks to cool and continue drying for several hours before bagging it |
