Oriental beef jerky

Ingredients:
3 lbsSteak
3 Garlic cloves, minced
1 tbspGinger, fresh, minced
2 tbspSesame oil
1/2 cupSoy sauce
2 tspRed peppers, dried, crushed
Tb Honey
1/2 tspWhite pepper
4 tbspDry Sherry
Procedures:
1Cut meat diagonally crosswise into ? thick, 2 " wide strips.
2Trim away any fat or gristle.
3Transfer to a non-metallic pan.
4Add the other ingredients and marinade 24 hours.
5Arrange meat on racks and let dry at cool room temperature overnight (do not refrigerate).
6Preheat oven to 22Line two large baking sheets with foil and set wire racks on top.
7Arrange the meat on racks in single layer.
8Bake 15 minutes.
9Reduce heat to 175°F and continue drying meat another 4 hrs or more.
10Leave meat on racks to cool and continue drying for several hours before bagging it
