Ingredients:

| med | Onions, coarsely chopped | | 2
| large | Red potatoes, diced (skin | | | -optional) | | 3
| | Granny Smith apples, peeled | | | -cored and chopped | | 1
| med | Celery root, peeled and | | | -diced | | 2
| tbsp | Vegetable oil | | 1
| gal | Chicken stock | | | Salt and pepper | | | Chopped chives for garnish | | | - (optional) |

Procedures:
| 1 | In a large pot, saute onions, potatoes, apples, and celery root in the oil. | | 2 | When the onions are soft, add the chicken stock. | | 3 | Bring to a boil, then lower to a simmer and cook for about 40 minutes, until all the vegetables are very soft. | | 4 | Force through a sieve for puree in a blender. | | 5 | Return to pot and reheat. | | 6 | Add salt and pepper to taste. | | 7 | Serve garnished with chopped chives if desired. | | 8 | serves 10 | | 9 | from the cookbook "apples" by robert berkley | | 10 | ar/93 |
