Ingredients:

| quart | Oysters | | 1
| cup | Oyster liquor | | 3
| tbsp | Butter | | 1
| tbsp | Flour | | 1
| cup | Milk | | 1/2
| cup | Cream | | 2
| tbsp | Shallots, minced | | | Salt and pepper | | 1/2
| lbs | Mushrooms | | 2
| tsp | Parsley, minced |

Procedures:
| 1 | Heat oysters in liquor over low heat until edges curl. | | 2 | Drain, saving liquor. | | 3 | Melt 1 tbs butter, blend in flour, add milk gradually, stirring constantly. | | 4 | Bring to boiling and cook 1 minute. | | 5 | Add cream, shallots, parsley, salt and pepper. | | 6 | Warm mushrooms in remaining butter until heated but not brown. | | 7 | Combine mushrooms, oysters, and oyster liquor to cream sauce. | | 8 | Serve immediately. |
