| 1 | Soak beans according to directions, using either method. |
| 2 | Drain beans and measure liquid. |
| 3 | Add water to make 1-?quarts. |
| 4 | Place beans, liquid, ham bone, onion and garlic in large kettle. |
| 5 | Simmer 1-?to 2 hours, or until tender. |
| 6 | Add potato, carrots, celery and green pepper. |
| 7 | Simmer 30 minutes longer. |
| 8 | Remove ham bone. |
| 9 | Cut up meat and return to soup. |
| 10 | Thicken with flour blended with a little cold water. |
| 11 | Add milk and heat gently. |
| 12 | Season to taste with salt and pepper. |
| 13 | Makes 6 to 8 servings. |
