Ingredients:

| cup | Water chestnuts, drained and | | | - choppe | | 3/4
| lbs | Ground beef | | 3/4
| lbs | Ground turkey | | 1
| tsp | Grated fresh ginger | | 1/4
| cup | Fresh coriander leaves | | | -(cilantro) | | 1/2
| cup | Fine bread crumbs | | 3
| tbsp | Soy sauce | | 1
| each | Egg, beaten | | 1/4
| cup | Dry sherry | | 1
| each | White pepper, to taste | | 1
| each | Your favorite barbecue sauce |

Procedures:
| 1 | Preheat oven to 425 °F. | | 2 | Heat the oil in a non-stick skillet, add the scallions, garlic, and water chestnuts. | | 3 | Cook briefly until wilted. | | 4 | Set aside. | | 5 | Place the beef and turkey in a mixing bowl. | | 6 | Add the scallion mixture and remaining ingredients, except barbecue sauce. | | 7 | Blend well with your hands, taking care not to overmix. | | 8 | Divide the meatloaf mixture into four equal portions and place in four individual 1 ?c. souffle dishes. | | 9 | Smooth the tops. | | 10 | Set the souffle dishes in a large pan with an inch of water and bring to a boil on top of the stove. | | 11 | Place the pan with the souffle dishes in the oven and bake for 30 minutes. | | 12 | Let the loaves cool about 5 minutes before unmolding. | | 13 | Spoon barbecue sauce over and around each loaf. | | 14 | Makes 4 servings. |
