| cup | Dry sherry | | 1/4
| cup | Soy sauce, reduced sodium if | | | - desired | | 1
| tbsp | Cornstarch | | 3
| tbsp | Vegetable oil, divided | | 8
| oz | Mushrooms, fresh, sliced | | 6
| oz | Pea pods, frozen, defrosted | | 4
| cup | Lettuce, thinly sliced | | | Chow mein noodles (optional) | | | Red Bell pepper, slices | | | - (optional) |

Procedures:
| 1 | Preparation time: 30 minutes cut the steak into 1/8" thick strips. | | 2 | (this is much easier to do if the meat is partially frozen). | | 3 | If meat is partly frozen, allow to thaw and then dry the meat. | | 4 | Combine sherry, soy sauce and cornstarch; pour over the meat, stirring to coat. | | 5 | Heat 2 tb. oil in a large nonstick skillet over medium high heat. | | 6 | Add mushrooms and pea pods; stir-fry 3 to 4 minutes. | | 7 | Remove vegetables; reserve. | | 8 | Drain marinade from beef and reserve. | | 9 | Add remaining oil to the skillet. | | 10 | Stir-fry beef strips (?at a time), 1 to 2 minutes. | | 11 | Return vegetables, beef and marinade to the skillet; cook and stir until sauce thickens. | | 12 | Serve beef mixture over the lettuce. | | 13 | Garnish with the noodles and pepper slices if desired. |
