Ingredients:

| cup | Millet | | 1
| each | Onion | | 1
| each | Carrot | | 1
| x | Olive oil | | 4
| cup | Boiling water | | 1
| tbsp | Soy sauce (Tamari is best) |

Procedures:
| 1 | Toast millet in a dry pan until it pops and turns a golden color. | | 2 | Remove millet from pan. | | 3 | Pour enough oil in pan to lightly coat bottom. | | 4 | Saute chopped onion until it turns translucent. | | 5 | Add chopped carrot (a cup of chopped hard squash works ok too). | | 6 | Saute a few minutes more. | | 7 | Add water, millet and about a tbsp. of high quality soy sauce or tamari. | | 8 | Bring to boil and then simmer covered for about 20 minutes |
