Ingredients:
3 1/2 cupApples, tart, thinly sliced
3/4 cupSugar
2 tbspFlour, all-purpose
1/2 tspSalt
3 1/2 ozCoconut, flaked
1 tspVanilla extract
2 tbspMargarine
CREAM CHEESE PASTRY
1 cupMargarine, softened
6 ozCream cheese, softened
2 cupFlour, all-purpose
Ds Salt
Procedures:
1Line a 10" piepan with half the pastry rolled 1/8" thick.
2Arrange apples in unbakes pie shell.
3Combine sugar, flour, and salt; sprinkle over apples, mixing well.
4Cover with coconut, sprinkle vanilla over top, and dot with margarine.
5Roll out remaining pastry, and place over filling; seal and flute edges.
6Cut slits in top to allow steam to escape.
7Bake at 400 °F for 10 minutes; reduce heat to 300 degrees and bake an additional 35 to 40 minutes.
8Cream cheese pastry: combine margarine and cream cheese; mix well.
9Cut in flour and salt iwht pastry blender.
10Shape dough into a ball; chill.
11Yield: enough pastry for double crust 10" pie.
