Pan-seared bison tenderloin

Ingredients:
4 6-7 oz Bison Filets
8 ozSmoked Elk or smoked Ham
-Julienned
4 tbspVegetable Oil
1 tbspChili Powder
12 ozCooked Linguine
2 ozMorel mushrooms, julienned
2 ozWhole butter
4 ozHeavy cream
Misc baby field vegetables
Marinated in vinaigrette
Procedures:
1Mix oil and chili powder together and rub evenly over filets and let rest for 30 minutes.
2Heat saucepan and sear filets on all sided, lower heat and cook, turning often until desired doneness.
3(medium rare to medium is recommended.
4Melt butter in pan and add elk and moresl.
5Saute 1 minute.
6Add linguine and heat, toss until hot.
7Add cream and stir until incorporated with pasta.
8Lightly charbroil vegetables.
9Place pasta on hot plate.
10Place bison filet in center and surround with char-broiled vegetables
