Ingredients:

Dough, shaped, ready for
Topping

2 tbspTomato Topping
2 ozFontina Cheese, shredded
5 ozMarinated artichoke hearts
8 Sun-dried tomatoes in oil
Salt and pepper
Parsley leaves, for garnish
-TOMATO TOPPING
1 lbsTomaotes, peeled

16 ozCanned tomatoes
2 tbspOlive oil
1 Onion, finely chopped
1 Garlic clove, crushed
1 tbspTomato paste
1/2 tspSugar
1 tbspFresh basil, chopped
Salt and pepper
Procedures:
1Make tomato topping.
2Chop tomatoes, if using fresh.
3Heat oil in a medium saucepan.
4Add onion and garlic; cook until soft.
5Stir in tomatoes, tomato paste, sugar and basil.
6Season to taste with salt and pepper.
7Cover pan and simmer 30 minutes until thick.
8Preheat oven to 425°F.
9Spread the dough with tomato topping.
10Sprinkle with cheese.
11Drain artichokes, reserving oil.
12Drain tomatoes.
13Slice artichokes and arrange over the cheese.
14Chop tomatoes roughly and sprinkle over the artichokes.
15Season to taste with salt and pepper.
16Sprinkle with 1 to 2 tablespoons of the reserved oil.
17Bake 20 minutes until dough is golden.
18Garnish with parsley.
