Ingredients:
1 cupAll-bran cereal
1 cupRolled oats
1 cupBoiling water
1/2 cupMargarine, melted
-OR- unsaturated oil
-- (such as soy or corn)
2 Eggs, OR...
6 tbsp-Egg substitute
1 cupButtermilk
1/2 cupMolasses
1/2 cupHoney
1 tspVanilla
1 cupCalifornia Dried Figs
1 1/2 cupWhole wheat flour
1 cupUnbleached or bread flour
-OR half rye or millet flour
- and half unbleached flour
1 tspBaking soda
1 tspBaking powder
Procedures:
1In a medium bowl, combine bran cereal, oats and boiling water.
2Add melted margarine, eggs, buttermilk, molasses, honey, vanilla, and figs.
3In a large bowl, blend whole wheat and unbleached flours, soda and powder.
4Add liquid ingredients, mix lightly, just until blended.
5Spoon into greased muffin tins (do not use muffin papers, they will stick).
6Bake in a 400 °F.
7Oven for 20 to 25 minutes.
8Makes 2 to 2-?dozen muffins.
