Ingredients:

| cup | Sifted all-purpose flour, or | | | -more | | 1
| cup | Water | | | Vegetable oil, for frying |

Procedures:
| 1 | Sprinkle zucchini slices with salt; allow to stand 30 minutes. | | 2 | Drain and pat dry. | | 3 | gradually add flour to water, beating with fork, until batter has the consistency of sour cream. | | 4 | Add more flour if necessary. | | 5 | add enough oil to large skillet to come ?inch up side. | | 6 | Heat to 375 degrees. | | 7 | Dip zucchini slices in batter and drop them in oil. | | 8 | Do not crowd skillet. | | 9 | Fry until bottoms have golden crusts, then turn slices over. | | 10 | Drain, salt if necessary and serve at once. | | 11 | Serves 6. |
