Gelato alla vaniglia (vanilla ice cream)

Ingredients:
2 cupMilk
2 cupCream
1 cupSugar
1 ea Vanilla bean, 4" long
6 ea Egg yolks
1 pinchSalt
Procedures:
1Split and crush the bean in a motar.
2Place milk, cream, sugar, and bean in an enamel pan over low heat.
3Bring to the scalding point.
4Beat the egg yolks with the salt till foamy, then add in the scalded cream mix, mixing well.
5Pour back into enamel pan and place over lowest heat .
6Stir constantly until mix coats a metal spoon.
7Pour through sieve into a bowl and chill thoroughly before freezing in a ice cream maker.
8(note:the little specks of bean should not worry you: they are an indication that the best ingredients have been used.
