Almond mousse au chocolate

Ingredients:
1 Envelope Unsweetened Gelatin
Powder
1/4 cupCold Water
2 Unsweetened Baking Chocolate
Squares
1 Semisweet Chocolate Square
1/2 cupMilk
1/2 cupSugar
1 pintHeavy Cream
1/4 tspAlmond Extract
1/2 cupBlanched Almonds -- toasted
& chopped
Procedures:
1Soften gelatin in water.
2Melt chocolate in milk over boiling water.
3Add sugar and stir until it dissolves completely.
4Let it cool.
5Whip cream until it stands in soft peaks.
6Stir almond extract and chopped almonds into cooled chocolate.
7Fold 1/3 of the whipped cream into chocolate mixture.
8Then fold in remaining cream.
9Pour into an attractive serving bowl and let set in refrigerator, covered with plastic wrap, for at least 2 hours or overnight.
10Decorate with whipped cream, candied violets, grated sweet chocolate or toasted almonds before serving.
