White chocolate mousse #2

Ingredients:
1/4 lbsWhite chocolate -- pieces
4 tbspUnsalted butter
3 tbspLight rum
3 Egg yolks
1/2 cupCream
3 Egg whites
SAUCE
4 tbspUnsalted butter
1/4 cupMilk
1/4 cupHeavy cream
1/2 lbsSemi-sweet chocolate
Procedures:
1To make the mousse, place white chocolate pieces in a large bowl with butter and rum.
2Place the bowl in a very low oven with the door ajar.
3The chocolate should take about 45 minutes to melt.
4This must be done slowly.
5Meanwhile, beat egg yolks in a large bowl of an electric mixer until light and thick.
6Transfer to top of double boiler.
7Cook, stirring, over hot water until thick.
8Return to mixer bowl.
9When chocolate is melted, stir with a wooden spoon until smooth.
10Slowly beat in egg yolks.
11Beat cream until stiff.
12Fold into chocolate mixture.
13Beat egg whites until stiff.
14Fold into mixture.
15Pour into a lightly oiled 8-inch spring form pan.
16Refrigerate overnight.
17to serve, cut into pieces and place on cold plates.
18Drizzle a small amount of warm chocolate sauce over the top of each wedge and place a "puddle" on either side.
19chocolate sauce: melt chocolate in top of a double boiler.
20Stir in unsalted butter, stir in milk and heavy cream, both at room temperature.
21Keep warm.
