| | Garlic cloves | | 1
| | Lemon, halved | | 1/2
| tsp | Cumin, ground | | 1/2
| tsp | Coriander, ground | | 1/2
| tsp | Paprika | | 1/2
| tsp | Pepper, fresh grind | | 1/4
| tsp | Cinnamon | | 1/4
| tsp | Cayenne pepper | | 1/2
| tsp | Salt | | 3
| tbsp | Olive oil |

Procedures:
| 1 | Preheat oven to 400°F. | | 2 | Pat chicken dry. | | 3 | Rub with flattened garlic cloves; place garlic in cavity. | | 4 | Squeeze lemon into small bowl; place lemon in cavity. | | 5 | Brush chicken with half of juice. | | 6 | Mix spices and salt and rub over and inside chicken. | | 7 | Tie legs together. | | 8 | Heat oil in large ovenproof skillet. | | 9 | Add chicken, breast side up. | | 10 | Add remaining lemon juice to skillet. | | 11 | Baste chicken withpan juices. | | 12 | Transfer to oven, and bake until juices run clear. | | 13 | Baste occasionally. | | 14 | Roast about 1 hour... | | 15 | Clay irving |
