Winter fruit couscous

Ingredients:
2 tbspOil
1/2 cupOnion, chopped
1 1/2 cupBulgur or brown rice
-uncooked
1 cupApricots, dried
1 cupPrunes, chopped
1 cupApples, dried, chopped
4 cupVegetable stock
1/2 tspNutmeg, ground
1/2 tspCinnamon, ground
1/4 tspCoriander, ground
Procedures:
1Heat oven to 350 degrees.
2Heat oil in dutch oven over medium heat.
3Cook onion in oil about 2 minutes, stirring frequently, until tender.
4Stir in bulgur.
5Cook about 5 minutes, stirring occasionally, or until bulgur is golden brown.
6Stir in remaining ingredients.
7Cover and bake 50 to 60 minutes or until bulgur is tender.
