Voluminous peach cobbler

Ingredients:
CRUST
1 cupShredded coconut
FILLING
1 cupDried peaches, soaked 1 hr
-- in ?c water
1 cupPitted dates, soaked 1 hr in
-- ?c water
5 medBananas, peeled
1/2 cupShredded coconut
12 eachFresh peaches, pits removed
2 cupBlack raspberries
2 tspGrated lemon peel
Procedures:
1Crust: sprinkle coconut evenly over the bottom of a 9" x 12" pan.
2Filling: drain the soaked fruit, reserving the water.
3Puree the soaked peaches in a food processor or a blender, adding a little soak water as necessary.
4Pour into a large bowl.
5Mash in the bananas & coconut with a fork.
6Spread this over the crust.
7Slice the fresh peaches & scatter over the top.
8Blend 1 ?c berries with dates & lemon peel in a food processor or blender until smooth.
9Mix in the remaining berries.
10Pour over the top of the pie & spread evenly.
11Serve immediately.
12Variation: substitute black raspberries with strawberries & slice those that are not blended before mixing in.
